Happy Spring, friends! A new season means new recipes, and I'm so excited to share this delicious mango salsa with you. I was inspired to make this because of a recent produce sale at the grocery store...1 mango for $1 and BOGO strawberries, can't beat that!
Ingredients
1 fresh mango
1/2 cup fresh strawberries (about 5 large berries)
2 teaspoons salt
2 teaspoons honey
Juice of 1/2 lemon (lime would work too!)
1 tablespoon fresh or dried cilantro
Start by slicing your fruit. I'm not an expert at cutting a mango...if you're struggling I suggest you YouTube it 😉
Now that you've sliced your fruit, it's time to dice those pieces even smaller. I used my Pampered Chef chopper which made this step very easy. If you don't have a chopper (I highly suggest one! Leave a comment if you need a PC contact) use a sharp knife to dice it up. Be careful! Mangos are slippery.
Add your diced fruit, honey, salt, lemon juice, and cilantro to a mixing bowl and stir. Your final product will look like this...
Delicious on grilled chicken, shrimp or fish tacos, or simply with some tortilla chips as a snack. 🐟🍤🐠
Like many of my recipes, this one has a lot of variations and versatility!
Looking to add some heat? A few diced jalapeños will do the trick. 🔥
I'm not a fan of raw onions, but I've seen this salsa made with diced red onion, too.
If you're like my husband and not into the sour taste of lemon, try pineapple juice instead. It adds the same amount of citrus with a little more sweetness. If you feel so inclined, add some crushed pineapple while you're at it! 🍋🍍
Go ahead, get creative.
Happy cooking, happy eating!
