I admit, I'm wayyyy late to the overnight oats game. Recipes have been blowing up my Pinterest for over a year!
I got inspired to give it a try in the midst of my most recent string of night shifts. I needed some serious healthy, energizing food that didn't require a lot of time or attention. It was so awesome to roll out of bed and have breakfast waiting for me in the fridge. Just add a spoon 😋🍴
The best part about this recipe is the versatility. A few simple basic ingredients and the rest is up to your imagination and your pantry stock!
Ingredients:
Steel cut oats
Yogurt
Milk
Honey
Toppings of your choice
Measure out equal amounts of oats, yogurt, and milk. Begin layering your ingredients in a jar with a tight fitting lid. Start with oats on the bottom, followed by any flavor of yogurt, a thin layer of honey, and your toppings.
Next, add your milk. And this goes for any kind of milk! I only had traditional dairy on hand, but almond, soy, or cashew milks would all be great too.
Pop it in the fridge overnight. The goal is 6-10 hours of soaking time.
I'm still exploring all the possibilities for flavor and topping options, but from a little bit of researching and a lot of brainstorming, here are some variations to try out.
Pb&j- natural nut butter and jam/marmalade
Almond Joy- slivered almonds, chocolate chips, and shredded coconut
Banana Bread- 1/2 banana, cinnamon, walnuts
Pumpkin Pie- 1/4 cup pumpkin purée, pumpkin pie spice, pecans
Pina Colada- 1/2 banana, 2 tablespoons pineapple bits, shredded coconut, 1 tablespoon coconut oil
Chunky Monkey- 1/2 banana, 2 tablespoons peanut butter, chocolate chips
It's that easy! With a recipe this simple, I'm not even sure you can call it cooking 😏
