I admit, I hate grocery shopping. Of course it's a must every now and then, but I hate leaving the house to face screaming toddlers and long lines at Giant. That being said, my dislike of grocery shopping can sometimes motivate me to use whatever I have in the house in creative ways.
That's what led to this recipe for homemade granola in all of its glory. Since the first time I made it, I've tweeked the recipe a bit, and now that I've perfected it I have some on hand at all times.

Ingredients
5 cups of steel cut oats
3/4 cup golden raisins
1 cup sunflower seeds
1/2 cup honey
1 1/2 cups peanut butter (hint hint, check my previous post 😉)
2 tablespoons vanilla
Pinch of salt
2 tablespoons cinnamon
Remember, these are just the ingredients I used! Granola is awesome because you can add what you want. For an extra healthy kick try adding hemp or flax, and if you want a seasonal variation add 1/2 cup of pumpkin purée, pumpkin pie spice, and walnuts. For my friends with peanut allergies, use tahini in place of the nut butter. The possibilities are pretty much endless.
Directions
Place honey and peanut butter in a microwave safe dish and microwave for 30 seconds, or until liquified. Add all ingredients to a large bowl and stir using a sturdy wooden spoon. Spread on a cookie sheet in a single layer. Bake at 400 degrees for 10 minutes, then lower temperature to 250 degrees and bake for an additional 20 minutes. Stir frequently while in the oven to avoid scorching. Remove and cool
Skip your next bowl of cereal and try this granola with almond or coconut milk. Mix some in with your yogurt, and add some fruit for a breakfast parfait. Use it in your baking for a batch of cookies or try making granola bars. Go ahead, get fancy with it and get your granola on 💁
