Mashed potatoes have been my all time favorite comfort food since as long as I can remember. Mmmm, carbs 😋. So, naturally, I created an even more delicious version (if that's even possible)
Thanksgiving Twice Baked Potatoes
Ingredients:
5 pounds russet potatoes
Stovetop stuffing
1 1/2 cup chicken broth
1/2 cup milk
2 tablespoons butter
Salt and pepper
Step 1:
Wash your potatoes in cold water. Poke holes into potatoes with a fork. Bake in a 400 degree oven for 75 minutes or until you can stick a knife through easily. Remove from oven and allow time to cool.
Step 2:
Cut potatoes in half. Using a spoon, seperate the skins from the flesh. Skins go back in the baking dish, baked potato flesh in a mixing bowl. Once you've done this to all your potatoes, add your milk and butter to the bowl and get to mashing! I use my kitchen aid stand mixer to get the potatoes really whipped and smooth. Season with salt and pepper. Pile the mashed potatoes back into the potato skins. It will look a little something like this....
Step 3:
Next, make your stuffing. If you read my stuffed mushroom post you know that I haven't ventured down the "make your own stuffing" path. I say go for the Stovetop, but replace the water with chicken broth. When the stuffing is made, use a melon baller to place one stuffing ball into the middle of each potato.
Step 4:
Pop them back in a 350 degree oven for about 35 minutes. I suggest serving them immediately with some gravy overtop, of course.
The final product is your traditional (and everyone's favorite) thanksgiving carbs in a personalized, single serving style.
