It's finally summer! And summer means it's time for barbecues, picnics, and dinner on the patio. This recipe is a PA Dutch classic that's perfect for all those summer events.
If you've lived in Pennsylvania for even part of your life you've probably seen these red beet eggs in the deli section at the grocery store or behind every Amish counter at the farmer's market. The recipe is simple and delicious, but admittedly not loved by all. Love them or hate them, they're an easy addition to your barbecue potluck.
The quantities listed are enough for a household of two. Double or triple the recipe as you see fit!
Ingredients:
6 eggs
1 can of sliced beets
1 teaspoon salt
1/2 cup apple cider vinegar
1/2 cup water
1/2 cup sugar
Step 1: Hard boil the eggs. Everyone has their own technique to have perfect hard boiled eggs, but here is mine. Place eggs in a pot filled with water until the eggs are just covered. Add a tablespoon of baking soda (this makes them easier to peel). Bring it up to a boil for 4 minutes, then turn the burner off. Leave it alone for 15 minutes, then drain the water and cover the eggs in cold water. Let stand for another 10 minutes, change the water as needed to keep it cool.
Step 2: While the eggs are boiling, add your canned beets and its juices to a Tupperware container or mason jar. Warning...beet juice stains something fierce! Add the remainder of your ingredients to the jar and give it a good shake or stir.
Step 3: Peel the hard boiled eggs and add them to the jar, making sure they are covered in the liquid. Let them sit in the refrigerator for at least 24 hours. The longer they sit, the more flavor and color the eggs take on.
Enjoy them straight out of the jar with some salt and pepper for an addition to your lunch or an afternoon snack.
Or, if you are looking for a classier presentation you can whip the yolks with 1 tablespoon of mayo, 1 teaspoon of mustard, and a couple drops of beet juice. Pipe the yolk mixture back into the eggs for a twist on your classic deviled egg.
