Even the most enthusiastic cooks get tired of the kitchen sometimes. I know that after a long day at work, sometimes the last thing I want to do is cook myself dinner. That's why my crockpot and I are best friends, it's always there for me when I'm tempted by Taco Bell status-post 12 hour shift. This recipe is a one pot crockpot wonder with minimal effort and minimal ingredients, making it perfect for the enthused and not-so-enthused cooks alike.
Peachy Pork Chops
Ingredients
4-5 boneless pork chops
2 cups fresh or frozen peaches
1/3 cup soy sauce
1/4 cup honey
1 tablespoon brown sugar
3/4 cup chicken broth
1/2 teaspoon dried ginger
1/2 cup apple cider vinegar
Salt & pepper to taste
No need for detailed instructions here. Throw all your ingredients in the crockpot.
Set on low for 6-8 hours. This is when the magic of the crockpot takes place.
Voila!
Using a slotted spoon, serve yourself a big helping of peachy pork chops. I served mine over brown rice and lentils to round out the meal, in which case I cooked the rice in the leftover juices from the crockpot. Yes I know, it's genius ;)
(If you're not into rice, try some mac and cheese or a baked potato as a side!)
Another tip if you're looking to mix it up? Forget the peaches and throw in an autumn twist with apples instead. Yay for versatility!
