We all crave just a litttttleee more energy. It could be your morning cup of coffee (guilty!), snooze button, or frequent afternoon naps. While I love all of these things, truth is we get a lot of energy (or lack there of) from the foods we eat.
But life is busy. And time is minimal. Real life doesn't always make way for a full, balanced breakfast or healthy snack. My mom, being the genius she is, starting making "power balls" for us years ago as pre-soccer game/dance rehearsal snacks, and I'm bringing them back in all their glory today.
I present to you, energy bites.

I present to you, energy bites.
Snack sized bites of wholesome oats, honey, nuts, and other healthy add ins rolled into a perfect on-the-go treat. The best part? They're easily made in one bowl. Minimal mess=happy Bri.
Here's how to make your own:
Ingredients:
3 cups of steel cut oats (not instant!)
1/2 cup of honey
1 1/2 cups nut butter of your choice
1/2 cup canned pumpkin
3 tablespoons coconut oil
1/4 cup chia seeds
1/2 cup shredded coconut
1/2 cup chopped nuts or seeds (I used sunflower seeds)
3/4 cup chocolate chips
1 tablespoon cinnamon
1/2 cup raisins or craisins (optional)
Here's how to make your own:
Ingredients:

1 1/2 cups nut butter of your choice
1/2 cup canned pumpkin
3 tablespoons coconut oil
1/4 cup chia seeds
1/2 cup shredded coconut
1/2 cup chopped nuts or seeds (I used sunflower seeds)
3/4 cup chocolate chips
1 tablespoon cinnamon
1/2 cup raisins or craisins (optional)
Mix together. Form into gold ball sized balls. Store in a zip lock bag or airtight container. Boom, that easy.
There is room for interpretation here, like most of my recipes. Try different nut butters, dried fruits, or flavored honeys. If you aren't into pumpkin, try applesauce instead. Experiment a bit! I've never tried one I didn't like!
