For as much as I love food, that love is equally matched for my hatred of doing dishes. A dishwasher is great and all but until I can snap my fingers and have everything clean and in its place I won't be happy. In the meantime, my husband will have to do.
Here's a recipe that's delicious and healthy, but won't leave you with a sink of dirty dishes.
Turkey Sweet Potato Skillet
Ingredients
1 lb ground turkey
2 small onions
1 zucchini
3 large sweet potatoes, peeled
1 can lentils
1 tablespoon chopped garlic
3 tablespoons olive oil
3/4 cup shredded mozzerella cheese
Salt and pepper
Step one
Grab your veggies and get choppin. You want your onion minced and your sweet potatoes & zucchini diced. Keep the potatoes and zucchini sized similarly so they cook evenly!
Step two
In a large skillet heat your garlic, olive oil, onions, and ground turkey over medium heat. After about 15 minutes your onions will become translucent and the turkey will brown.
Step three
Add sweet potatoes and 1/4 cup water. Cover with a lid and set your timer for 20 minutes. Stir at the 10 minute mark. When the timer goes off, add zucchini and lentils. Cook for another 10 minutes, season with salt and pepper.
Step four
Top with shredded cheese, turn off heat, and cover for 3 minutes. Your final product will have nice layer of melts, bubbly cheese
I suggest serving this one-pot-wonder with some cornbread and a side of your favorite Netflix series 😉
