Happy New Year, friends! I wanted to start 2015 out right with a recipe that will help you keep your health conscious New Years resolutions.
One of my favorite late night binge foods is tacos....doesn't matter where, when, or how I get my hands on them, I could eat (literally, this is embarrassing) like 6-7 in a sitting. Tacos, depending on how they're made, can actually be a balanced meal (taco bell doesn't count...even though I love a good Doritos locos taco once in a while), but I wanted a new way to keep this meal healthy and delicious.
Taco Stuffed Peppers
Ingredients:
2-4 bell peppers, colors of your choice
1 pound ground turkey
1 tablespoon of garlic
1 onion
1 can of black beans
1 cup brown rice, cooked
2 cups sweet corn, frozen or canned
Pinches of salt and pepper
Salsa, guacomole, shredded cheese, and sour cream for garnish
Start by mincing the onion and adding it to a pan with 2 tablespoons olive oil, a pinch of salt, and the garlic. Let the onions sweat and become translucent. Next, add the turkey and cook until browned. Add the beans and corn until corn is thawed (if using frozen). Stir in the rice. This wonderful mixture is your filling.
Prep your peppers by removing stems, cutting down the center and removing the white stringy stuff in the middle of the peppers. Place in a casserole dish with about 1/4 inch of water at the bottom. Bake in a 350 degree oven for about 30 mins until peppers are tender but not mushy. Drain water
Now you put the "stuff" in stuffed peppers! Add your filling to the cooked peppers with a spoon. Return to the oven for about 15 minutes or until heated through.
Sprinkle on some cheese and return to the oven for 3 minutes or so, or until the cheese is melted. Top with salsa, guac, and sour cream as desired!
Now I could eat about 6 of those and not feel guilty about it! Perfect for your next Taco Tuesday.
